Nami no Oto Brewing : Background
Nami no Oto Brewing is a brewery located in Minami-Awaji, on the island of Awaji, which is south of Kobe, and is in Hyogo prefecture. The brewery opened in June 2023, and since then, has operated an on-site taproom attached to the brewery on the weekends only.
The head brewer, Kono Mitsuaki, initially studied agriculture for a total of six years, including graduate school, before finally hitting the craft beer brewing industry with Kotobuki Brewery (Kuninocho Beer) in Takatsuki City, Osaka, where he spend five years making sake and craft beer. Here, he got the idea of there being a way to make better use of agricultural produce. Having originally studied agriculture, he also wanted to value connections with farmers and producers.
Awaji Island was chosen as it was once called the land of food, Awaji Island is a veritable treasure trove of food, with a wide variety of agricultural products still grown there today, as well as thriving fishing and livestock farming industries. Awaji is famous for fruits such as Naruto oranges, strawberries, and peaches, as well as onions, cheese made from Awaji Island milk, sea bream, whitebait, and farmed flounder.

The following are some of the beers we’ve had from Brewery :
- Nami no Oto Belgian White – a 5% Belgian wit brewed with traditional ingredients though with Naruto oranges being used in this one.
- Nami no Oto Big Wednesday – a 6.5% American IPA that uses locally produced salt from Goshiki Beach as an adjunct in the making of the beer.
- Nami no Oto Breakfast Club – a 5.5% coffee pale ale brewed with beans specially blended for the beer by Awajishima BASE COFFEE.
- Nami no Oto My Pace – an 8.5% sake beer based on an American IPA recipe and uses Mosaic and Nelson Sauvin hops as well.
