Two Rabbits Brewing Company : Background
Two Rabbits Brewing Company is a brewery located in Omihachiman, in Shiga, Japan. Owner, and head-brewer, opened the brewery in September 2018, after Sean returned to Australia to learn about beer brewing, and attended the Australian National Brewing School, a vocational school for brewing, and obtained a brewer’s license. Sean’s wife, Collette Ayako, is the representative director and one of the founders of Nito Brewing Co., Ltd., and is in charge of management, public relations, and design.
The name Two Rabbits Brewing comes from a Japanese proverb that says, “He who chases two rabbits catches neither.”

- Two Rabbits Moon Rabbit – a 4.5% session hazy IPA brewed with Mosaic, Citra, El Dorado, and Columbus.
- Two Rabbits Mountain Kick DIPA – a 9% double IPA brewed with El Dorado, Nelson Sauvin, Columbus, and Sorachi Ace hops.
