Groundtap Brewery : Background
Groundtap Brewery is a Japanese brewery located in Saijo, in Ehime prefecture on the island of Shikoku. The brewery, which opened in June 2023, is based inside of an abandoned cram school, and the brewery worked to ensure that all of the rooms are used for some part of the brewery. One part of the cram school is used as a bottle shop, while the remaining part is used as the brewhouse and the tasting room for Groundtap Brewery.
Groundtap Brewery takes its name from the process of them “tapping” the local water out of the “ground”. Saijo’s well-known spring water “Uchinuki” gushes out over a wide area of the city, and in the past, underground water was secured by driving iron rods into the ground.

The following are some of the beers we’ve had from Groundtap Brewery :
- Groundtap Dream Train : A 7% hazy IPA brewed with a combination of Cascade, Citra, Mosaic, and Riwaka hops.
- Groundtap Lager : A 4.5% rice lager made using Saijo’s water “Uchinuki” and rice grown in Saijo.
- Groundtap Road in the Sky : A 6% hazy IPA brewed using Citra, El Dorado CGX, and Motueka hops.
- Groundtap Tap Tengu : An 8.5% double IPA brewed with Amarillo, Chinook, Citra, and Strata CGX hops.
