Sankt Gallen Tiramisu Chocolate Stout : Background

Sankt Gallen Tiramisu Chocolate Stout is an 8% pastry stout from Sankt Gallen, based in Atsugi, Kanagawa. It’s part of their bottled and draught lineup, with it being available for only a couple of months before Valentine’s Day 2025. As the name suggests, the beer is modelled after one of the best desserts ever made, tiramisu. Sankt Gallen Tiramisu Chocolate Stout is brewed using biscuits, coffee, lactose, oats, and vanilla in the form of adjuncts and uses Calypso, Cascade, and Chinook hops as well.

Sankt Gallen Tiramisu Chocolate Stout : Appearance, Aroma, and Taste

The beer poured out a darkish brown, almost pitch black colour, with a thin amount of slightly off-white head on top. The head didn’t last long; fading to a few bubbles along the top of it, and some small bubbles down the side of the glass.

The aroma was all pastry stout though with lots going on. Thankfully it wasn’t overly sweet, with a smooth creaminess present throughout drinking, and toasted biscuit aroma as well. As the beer warmed up, there was a strong chocolate and coffee nose present, though I would have liked some more booziness present as the tiramisus I’ve made, well let’s just say I am bit more generous when it comes to the alcohol than is probably healthy.

As in the aroma, the body was as smooth and delicious, and much lighter bodied than I expected it to be. The coffee and chocolate flavours came to the forefront first of all, with some of the biscuit body providing a different level of sweetness going round. There wasn’t much booziness present in the body either – something that could really have been done with ramping up. In the end, the flavours intermingled with one another nicely, with the creamy vanilla flavour just lying under the surface.

Sankt Gallen Tiramisu Chocolate Stout : The Bottom Line

It wasn’t as boozy as I would have liked, but nor was it overly sweet. An interesting, and dare I say it, fun take on the beer style.
