Background
Brew Classic is a brewery located near Kanazawa Port in Kanazawa City, Ishikawa Prefecture. The brewery got its name because of the desire to make craft beer that will one day be called ‘classic’. They obtained their license in December 2021 and began brewing soon after. Their beers first came on sale in March 2022.
It was co-founded by head brewer Fujiki, who has 32 years of brewing experience, and local brewer Sakao Takenori. Sakao became interested in craft beer while studying for his MBA in Boston. After working on beer trucks, producing OEM beer and visiting breweries in Japan and abroad, he started his brewing apprenticeship at Mt Fuji Brewing. He then went on to establish his own brewery near his home port of Kanazawa.
They are particular about the usage of yeast as well. The brewery uses ‘fresh liquid yeast’ every time they brew, instead of using recaptured yeast. In September 2024, Brew Classic opened a taproom in Kanazawa city.

- Brew Classic Pirupiru Hebi Impact – an 8% West Coast Double IPA brewed using Centennial, Centennial Cryo, Galaxy, and Simcoe hops.
- Brew Classic Revive The Kimagure Sushi – a 5% IPL brewed predominantly with Saaz hops, with Nelson Sauvin used for dry hopping.
- Brew Classic Ultra Dragon – 6% hazy IPA brewed using Mosaic and Simcoe during and Cryo Amarillo for dry hopping.
