Nami no Oto My Pace is an 8.5% sake yeast ale from Nami no Oto Brewing, based in Minamiawaji, on Awaji Island, in Hyogo, Japan. It’s part of their canned and draught lineup, though its availability is unknown at the time of writing. Nami no Oto My Pace is based on an American IPA recipe, though uses sake yeast for fermentation, alongside locally grown rice as part of the grain bill and uses Mosaic and Nelson Sauvin hops.

Nami no Oto My Pace : Appearance
The beer poured out a slightly hazy dark golden honey colour with barely any head on it at all. What bubbles that did appear faded very fast to a couple around the edge of the glass.
Nami no Oto My Pace : Aroma
Mixture of sake like quality to it, with hop fruitiness. The hops brought tropical notes of mango and pineapple, with some grapes and lemons also present as the beer warmed up. The malt sweetness was muted in comparison and had a rather dry approach.
Nami no Oto My Pace : Taste
Dry and bitter, though the bitterness was mild. The body was crisp from start to finish, with a sake like quality to the body, alongside the mix of citrus and tropical notes. It was an easy drinking beer, with the flavours being well balanced and smooth throughout without any discernible off flavours.
