Flora Fermentation Information

Background

Flora Fermentation is a brewery located in Higashiomi City, Shiga Prefecture. The brewery opened in August 2024, at the base of Egenji Temple in the city. The brewery was founded by three brewers, Kohei Onishi, Kai Shimizu Neubauer, and Shota Tanaka, with the aim of balancing agriculture and brewing with the theme of “agriculture and fermentation.” The brewery takes its name from “flora” which means “plants and microorganisms in a specific region” and is the goddess of fertility in Roman mythology, and is also the motif of the logo mark.

All three of the brewers gained experince at Nagahama Roman Beer with Onishi-san also getting experience at Hop Kotan Brewing, with Shimizu-san gaining experience at Kyoto Brewing Company. At the time of writing, Flora Fermentationcurrently grows four varieties of hops: Cascade (American variety), Chinook (American variety), Hallertau (German variety), and Saaz (Czech variety), and plans to eventually grow enough to produce a year’s worth of beer.

Beer Reviews

The following are some of the beers we’ve had:

  • Flora Constancia – A 5% Mexican amber lager brewed with Cascade, Spalter Select and Styrian Wolf hops.
  • Flora Piper – A 4.5% saison that is brewed with locally sourced hassaku oranges and two types of pepper : black and pink.
  • Flora Utsurobune – A 7.5% hazy IPA brewed with Ekuanot, El Dorado, Idaho 7, Simcoe, Strata, and Waimea hops.
