Background
Taisetsu Ji-Beer is a craft beer brewery located in Asahikawa, Hokkaido that opened in 1996. All of their beers use underground water from the Mt. Taisetsu range and the buildings that house the brewery and restaurant have been designated as Registered Cultural Properties. The red brick warehouses built in the Meiji and Taisho periods.
Taisetsu Ji-Beer actively incorporate local ingredients. Currently, many beer ingredients are imported, but they try to use safe and reliable ingredients, so they brew beer mainly using agricultural products from within Hokkaido. They outsource wheat to farmers in the Asahikawa area, such as Shimokawa and Biei, who use their malting techniques. Taisetsu Ji-Beer use still water from Mt. Daisetsu, Hokkaido’s famous peak.
