Cave D’occi Linger

Cave D’occi Linger : Background

Cave D’occi Linger is a 6.5% sour IPA from Cave D’occi Brewing based in Kakudahama, Niigata. It’s part of their canned and draught lineup, and is also available all-year round. Cave D’occi Linger is brewed with Mandarina Bavaria hops from Germany and is part of their “solo” series of beers which, according to the brewery, are designed to “bring the philosophy of a winemaker into everyday life. By deliberately narrowing it down to “just one type of hop,” the motto is to bring out the pure individuality and unadulterated beauty of the ingredient itself, like a solo performance on an instrument.

Cave D’occi Linger : Appearance, Aroma, and Taste

Cave D’occi Linger poured out a slightly hazy muddy, orange colour with a thin layer of white head on top, though it did fade a touch. However, the body was pretty well carbonated and managed to keep enough of the head on top until the end of drinking. However, those same bubbles also clung to the side of the glass, showing off every unwashed spot in the glass – and I’m sorry for that.

There was a clean orange aroma right from the get-go, that didn’t let up from start to finish – it was almost enough though lacked the pulpiness of aroma that an orange juice often has. The sour notes eminating from the beer definitely got my nose’s attention, but those some sour notes didn’t dominate or overpower during drinking. In the back end of the aroma, Cave D’occi Linger had a light note of sweetness to the beer.

The body began with a distinct, but clean, sourness to it that didn’t disappoint, but also didn’t develop into anything more than your typical kettle sour. There was a touch of bitterness to the body, though, unfortunately, the sourness did dominate over it. Cave D’occi Linger had a clean orange flavour from the beginning paired up against a light lemon note when the beer had warmed up, which alongside the sourness, was overall a pleasant beer, though the body was lighter than expected.

Cave D’occi Linger : The Bottom Line

Cave D’occi Linger shows off the Mandarina Bavaria hop variety really well, with its clean orange and light lemon notes, though perhaps a sour IPA wasn’t the best idea to show that hop off – not a beer for everyone, which is a shame.
