Background
In Tha Door Brewing is small brewery located in Kobe, Hyogo. The brewery started up in 2015. When we first established the beer brewing company in Kobe, we had a discussion. That was, “What kind of beer do we want to be as a brewery?” Where should we aim?” With American craft beer having a strong influence since the early 2000s in Japan, In Tha Door Brewing took stock of this. They realised that there are other countries with an equal amount of brewing culture : Belgium, Germany; yet Japan lacked one.
As such, In Tha Door Brewing didn’t want to simply copy other countries’ styles or ethos. Instead, they want to be something rooted in the local community with their own way of brewing. Moreover, this extends to the ingredients used in brewing. It’s common for the industry to use raw materials from overseas, and breweries that used Japanese raw materials to make beer were rare, either due to the lack of quality materials, or simply the cost of obtaining them. Since the first brewing in July 2015, they have have been using 100% of Kobe’s natural water “Nunobiki no Mizu (Kobe Water)” to make beer, and are using as much locally produced materials where possible – including malt and hops.
