Kyoto Brewing Shingyoso Shin : Background
Kyoto Brewing Shingyoso Shin is an 8% West Coast Double IPA from Kyoto Brewing Company, based in Kyoto, in Kansai, Japan. It’s part of their canned and draught lineup, though its on a limited release as part of the Shingyoso series. It takes its name from the kanji “真” – shin – which in this case does not mean new, but orthodox, with the new head brewer at Kyoto Brewing Company intent on making an old-school West Coast Double IPA. The beer is brewed using Mosaic hops as the main, with Citra in support.

Kyoto Brewing Shingyoso Shin : Appearance
The beer poured out a slightly hazy golden colour with a large amount of frothy white head, consisting of a variety of large and small bubbles. The head collapsed on itself quite quickly, leaving some streaks down the side of the glass.
Kyoto Brewing Shingyoso Shin : Aroma
I love Mosaic hops and I was not let down with this beer. There was a big waft of citrus notes which consisted of lemon and grapefruit, and as it warmed up, some passion fruit came through. The malts were light, but a touch of sweetness pervaded through drinking. The best thing about the beer for me was the residual dankness from start to finish.
Kyoto Brewing Shingyoso Shin : Taste
Medium bitterness to start, that wasn’t punchy, but was pleasant. The citrus notes were of course present during drinking, alongside the dankness / pine resinous notes that were in the nose. The alcohol was restrained and wasn’t noticeable at all.

I regret not getting more of this beer – worth finding and trying if you’re a fan of classic West Coast IPAs.
