Background
Novoru Hibiscus is a 5% kettle sour from Novoru Brewing, based in Miyazaki, in Kyushu. It’s part of their canned lineup though we’ve not head about it being available on tap. It is also part of their bouquet series of beers, which is a series designed to show off various aromas from Miyazaki. They used blueberries, raspberries, and hibiscus though what strain of bacteria, if any, to make the beer sour is unknown.

Novoru Hibiscus : Appearance, Aroma, and Taste
Vibrant pinkish red colour with a pink-tinged head on top, made up of small bubbles that faded to a thin ring around the edge.
Fruity but not sour – lots of raspberry tartness on the nose, but no real discernible sour beer notes at all. Light dusting of blueberry sweetness as the beer gets warmer with some floral notes present too.
Tart but not sour, fruity and full bodied, but not like a wine. It’s a hard one to pin down for sure. It doesn’t taste like a beer – there’s not malt sweetness or hoppy bitterness present during drinking, it really does taste like an alcohol spiked fruit juice. There’s lots going on but I couldn’t say it was sour from any bacteria.
