Ise Kadoya Sakekasu Hazy IPA by Ise Kadoya

Ise Kadoya Sakekasu Hazy IPA is a 6.5% NE-IPA from Ise Kadoya, based in Mie, Japan. It’s part of their limited edition range, and can be found in both bottles and on tap, though its availability is unknown at the time of writing. As the name suggests, Ise Kadoya Sakekasu Hazy IPA is brewed using the sake lees, or dead yeast / mold used during the production of sake. When koji, a type of fungus used for sake brewing, is added to steamed rice, it releases amylase enzyme, causing the rice starch to be broken down by the enzyme creating sugar. After that, the yeast is added to the mixture and transforms sugar into alcohol, which is Japanese sake. Finally, during the process when the fermented rice mash is compressed, and the sake is expressed from the mash. The residue that remains behind from the process is called Sake Kasu.

Ise Kadoya Sakekasu Hazy IPA Aroma and Taste

Ise Kadoya Sakekasu Hazy IPA poured out a hazy golden orange colour with a thin amount of white head on top that remained throughout drinking. Ise Kadoya Sakekasu Hazy IPA had an interesting fruity aroma to it, with a smattering of rice-like aroma going on too. Not really a surprise there considering the background of how this beer is made. The fruitiness was slightly phenolic, with just a hint of orange and grapefruit coming through in terms of hops – a very interesting mix of aromas going on. In terms of malt sweetness, there was a light crackery pepper-like aroma present but it only came through once Ise Kadoya Sakekasu Hazy IPA had warmed up somewhat, but by that point, the sake flavour began to dominate proceedings.

Ise Kadoya Sakekasu Hazy IPA didn’t have your usual bitter IPA kick to it, with a soft flavour profile first and foremost. The phenols from the yeast were more than noticeable when chilled, with the sake-like quality of flavours coming through the most. The rice-like flavour was peculiar, in a good way, though it did faded to allow more of the hops to come through, with them being ones of grapefruit and orange over anything else. The flavours didn’t really stick around for very long, with the body being a tad dry and light, and a dusting of alcohol present once Ise Kadoya Sakekasu Hazy IPA had warmed up.
