Songbird Fuji by Brewery Songbird

Songbird Fuji is a 6.5% sour beer from Brewery Songbird, based in Kisarazu, in Chiba, Japan. It’s part of their limited edition range and can be found in bottles only. It is secondarily fermented with wild yeast found on the skin of Yamatobinion, a strain of Japanese grape, that was harvested from the Saito Grape Garden back in 2015.

Songbird Fuji poured out a golden orange colour with a thin amount of bubbles that just about managed to cling onto the side of the glass. It had a sour nose to it from the start – no surprise sour nose here – but the sour nose did get stronger as Songbird Fuji warmed up. Thankfully it did have some grape and lemon notes to it to take away from the sourness – I’m not a big sour beer fan but Songbird Fuji did smell much nicer after letting it air for a bit than if I had just drunk it straight away.

The best way to describe Songbird Fuji is that it doesn’t taste like a beer – more like a thinner version of a white wine. The lemon and grape notes to the body were balanced well with the sourness – I’ve had some sour beers that seemed like the American IPA cousins – just ramp up the bitterness! Songbird Fuji was more nuanced than that and brought a long-lasting fruity flavour before an oaky residue remained on the palate. The carbonation was also on the low side for a beer – not even a pop when I opened the body. If it had been slightly more carbonated, it would have helped to lift up some of the flavours too.

At 750ml, Songbird Fuji is a bit too much for one person to drink, so share it – a nice sour beer.
