Baird Dark Sky Imperial Stout is a Russian stout dry-hopped with two different hops; American Centenniel & Amarillo, that produces a beer that is a true heavyweight among the Baird Beers at 9.5%. Baird Dark Sky Imperial Stout is also one of Baird Beer’s seasonal offerings and is available from December and can be found in the pub or in bottled form.

One of Baird Beer’s strongest beers, this comes in at 10%. Not a session beer unless the session lasts for 20 mins.

Baird Dark Sky Imperial Stout Aroma and Taste

Baird Dark Sky Imperial Stout pours out a thick black colour with a dark brown head that doesn’t hang around for long. Baird Dark Sky Imperial Stout is unforgiving and doesn’t take prisoners. It is very forthcoming in its smell with various aromas going on. Chocolate, coffee, with fruits such as raisin and figs going on. It’s all a bit too much to take in really. What was most mysterious were the added citrus notes from the additional hops to the beer.

However, drinking Baird Dark Sky Imperial Stout is a real pleasure and something that should be savoured. Not because we condone getting drunk, quite the opposite. This beer has so much going on in it that you want to know what each flavour is. The coffee flavour is paired with some ash like flavours that blend well with the chocolate and caramel notes that finishes off with some bitterness from the hops. The body of Baird Dark Sky Imperial Stout is a lot thinner than other Russian Imperial stouts that I’ve tried but the flavours are much deeper on the other hand.

Baird Dark Sky Imperial Stout can be bought in December in Baird Beer Taprooms, else try buying it online soon after it comes out. We got out bottle from GoodBeer but at the time of writing, it had sold out.
