Baird Shimaguni Stout is a dry stout beer from Baird Beer that is part of their all year range of beers. It has an abv of 5% so is well-suited for a drinking session. It is also one of an ever-decreasing number of beers that use floor-malted Maris Otter , where the barley is spread out over a floor and allowed to germinate, rather than using a machine to do the hard work. Of course, this costs more but as long as the price doesn’t go up too much then the customer doesn’t end up paying too much either.

Baird Shimaguni Stout Aroma and Taste

Dry stouts are a dying breed of beer in Japan, with so few of them on sale so it’s good to find a craft beer brewery producing one regularly throughout the year. Ok, everyone knows Guinness yet why aren’t there more dry stouts in Japan as Guinness seems to be drunk by every Irish Japanese person I know of. But don’t go expecting a Guinness-like experience from Baird Shimaguni Stout anytime soon.

Baird Shimaguni Stout poured out a pitch black colour, perhaps with a faint hint of brown in the shallower sections and an off-white frothy head that lingered while the beer went down. There was a lot going in the nose department with coffee and sweet aromas being the forerunners to a smoky aroma that wasn’t as strong as I expected from it. There was a hint of sweetness too with a bit of dark chocolate going on as well.

The dryness was present from the first sip to the last gulp with Baird Shimaguni Stout following the aromas through to the body so the expected coffee was present though the best part was the chocolate flavour developing as the beer got warmer and the sips turned into gulps. The oily texture left on the tongue wasn’t bad but meant that the dryness I had hoped for didn’t fully develop.
